Last night’s cioppino was quite lovely. Not having had any christmas eve culinary traditions growing up, I decided to adopt the Italian tradition of a seafood feast. But with only 3 of us, it was really just soup, some marinated shrimp, and lobster dip.
Iron Chef Barry is in charge of today’s menu. Last seen he was spatchcocking the game hens.

The good thing about Xmas traditions is that there are so many of them.
I think cioppino sounds excellent. I’m having a yummy Xmas morning breakfast of fried slices of spoon bread with maple syrup, bacon, and coffee. Those of us who cook just for ourselves or a few other people can’t really justify the traditional huge spread, so we just have to enjoy what we do make for ourselves all the more.
BTW, “spatchcocking” is an excellent word. I’m glad to see it somewhere besides in one or two cookbooks.

I like “flaying” better than “spatchchocking.” More descriptive of the actual process.
I made a variation of the Afghani game hen recipe in Steve Reichlen’s Barbecue Bible, without the hot pepper, since the Crone’s mom was joining us for dinner. I like being able to grill on Christmas day. although i’d be happy to be stuck in the house watching the rain come down.
I think we have some cookies left, Joe. You should stop by and grab some.
